Greek Salad
- 2 cups of chopped Romaine lettuce
- 1 medium cucumber, sliced
- 1 medium tomato, diced
- 1/2 red onion, sliced
- 1/2 cup of Kalamata olives
- 1/2 cup of crumbled Feta cheese
- 1/4 cup of olive oil
- 1 tablespoon of red wine vinegar
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions:
- In a large bowl, mix the lettuce, cucumber, tomato, onion, olives, and Feta cheese.
- In a separate bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the salad and toss well to combine.

Souvlaki
- 1 pound of chicken or pork, cut into small cubes
- 1/4 cup of olive oil
- 1/4 cup of lemon juice
- 2 cloves of garlic, minced
- 1 tablespoon of dried oregano
- Salt and pepper to taste
Instructions:
- In a large bowl, mix the olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Add the chicken or pork cubes to the bowl and toss to coat in the marinade.
- Thread the meat onto wooden skewers and grill or broil until cooked through.
