Being in Greece, I decided to show you a traditional local dish, Octopus Cooked in Wine.

  1. The most common way to have octapus in greece is meze style called "xidato". You cook the octapus ( 1kg) in a pot with
    1 cup of olive oil
    1 cup of vinegar
    1 cup of dry white wine
    1 bay leaf
    and cook on medium low for 40 minutes.
    After that you take it of the pot and caver it with oregano (1 t.s.). When is cold you cut on bite size pieces and put it in a big jar with the juices from the pot and keep it on the fridge. On the jar you can also add minced garlic, capers, anice and even fresh chili or chili flakes if you like some heat. The more time it has to marinate the more tasty it gets. Served with some olive oil and vinegar and goes very well with a glass of tsipouro or raki
