The best Greek recipe for vegetables stuffed with rice. Usually it is made just with vegetables, rice and olive oil, but you can add mince too. I share with you all my secrets for the most beautiful dish of the summer. Serve hot or cold, it is even better the next day at the room temperature with mature tangy feta, sour cream or tzatziki … yummm
Ingredients:
• 3 ripe large tomatoes
• 3 medium aubergines
• 4 peppers
Filling
• flesh from 4 aubergines
• 1 grated courgette
• 12 tbsp. basmati rice
• 2 chopped onions
• 100ml olive oil
• 5 tbsp. pine nuts
• 5 tbsp. raisins
• 50g chopped parsley
• 30g fresh chopped mint
• 2 tbsp. breadcrumbs
• 1 tbsp. sugar
• chopped tomato flesh

• salt & pepper
