Tofu & Spinach Pie with Filo / Phyllo Pastry| Vegan Spanakopita – This is a really delicious Greek inspired vegan spinach pie recipe. A super quick and brilliantly simple tofu feta and spinach pie with layers of filo / phyllo pastry to give you the most amazingly crispy pie that is perfect for a hot summers day.

½ leek – chopped
4 garlic cloves – minced
250gr baby spinach
1 lemon – zest and juice
1 pack filo / phyllo pastry (around 400gr)
400gr firm tofu
1 bunch of fresh dill
2 tbsp olive oil – for sauteing
Hemp seeds
Dried parsley
50 ml olive oil for brushing
