Our Greek Pasta Salad recipe is the perfect Summer side dish. Make it at home following these steps with our very own Skyline Chili Greek Dressing.

Ingredients:
1 Box of Bow Tie pasta noodles
1 cup of crumpled feta cheese
1 cup of small pitted Kalamata olives (slice if too large)
1 cup of Roasted Red Peppers
Add a few pepperoncini’s to taste
1 cup diced red onion
1 cup of chopped carrots
Β½ cup chopped fresh parsley
1 tbsp dried oregano
Β½ tsp crushed red pepper flakes
Β½ bottle of Skyline Greek Salad Dressing
Optional: Skyline Oyster Crackers
Optional: Skyline Hot Sauce

Instructions:
Cook 1 pound of bow tie pasta noodles in a pot of salted water (about 1 teaspoon) per the instructions on the package (usually 10-12 minutes).

When Pasta is done, save 3 tbsp of pasta water in a large bowl, drain pasta and put in large bowl and with 3 tbsp of pasta water and toss.
Set aside and let cool to room temperature.

In another bowl add:
1 cup of crumpled feta cheese
1 cup of small pitted Kalamata olives (slice if too large)
1 cup of Roasted Red Peppers
Add a few pepperoncini’s to taste
1 cup diced red onion
1 cup of chopped carrots
Β½ cup chopped fresh parsley
1 tbsp dried oregano
Β½ tsp crushed red pepper flakes
Mix well and toss in the cooled pasta

Pour in half of a bottle of Skyline Greek Salad Dressing and mix well to taste. Can add more dressing as desired.

Yields 6-8 side dish servings

Pro Tip: Always serve with Skyline Oyster Crackers and Skyline Hot Sauce on the side OR make a cracker topping for the salad!

  1. A FEW peperoncinis? Those rock, add the whole jar, save the liquid, add boiled eggs to the liquid, wait a couple of days, take the eggs and slice them and add them to the salad! Yummers!!!!
