Ingredients for Cajun Shrimp:

1 lb medium or large (I used 31-40 Count), peeled and deveined
1 tsp cajun spice
2 cloves garlic, pressed or grated
Pinch of salt
2 Tbsp unsalted butter

Ingredients for Salad:

1 medium romaine lettuce (5-6 cups chopped)
1/2 lb (3 medium) Roma tomatoes, sliced
1/2 medium red onion, thinly sliced
1/2 English cucumber (or 3 small), sliced
2 avocados, peeled, pitted and sliced
1 cup corn kernels (from 2 freshly cooked cobs)

Ingredients for Cilantro-Lemon Dressing:

Juice of 1 large lemon (3 Tbsp)
1/2 small bunch of cilantro (1/2 cup chopped)
3 Tbsp extra virgin olive oil
1 tsp sea salt or 3/4 tsp table salt
1/8 tsp black pepper

  3. hi so i have a question natasha its hard to find a cajun spice here in our town so what if i dont put a cajun spice on it is it a problem or not?another one its hard to find an cilantro here in our town so what do you think if i use any other herbs other than that?

  6. I made this recipe for dinner and my husband, my brother and I loved it!!! The only thing I added to the salad was 2 finely chopped Serrano peppers.
    Boy, it was just spicy enough for our family whom eats spicy food!!!
    Loved it!!!

  7. if you want to kick this up a notch flavor/dressing wise what I do is I put 1 or 2 avocados in a food processor, drizzle in some EVOO, add lemon or lime juice, some garlic and de-stemmed cilantro with a dash of salt n peppa then blend it together till creamy adding more evoo as needed to get that creamy but not runny consistency. Its a joygasm in your mouth I'm telling ya!
