  1. A wonderful birthday present … for us!! Those both look delicious, I love the crunch. It looks time consuming, but simple enough to give it a try. It's a relief to see those middle layers can be a little imperfect and no one will be the wiser! haha! A big MABROOK to your daughter!!

  5. She did great! I was very edified concerning stacking the layers with starch and continuing to roll them to get them thinner. When I have made spanakopita, and I haven't done big pans lately, as it's easier to make individual wrapped triangles for social gatherings, etc., I was told to butter every other layer of phyllo. You only buttered the top, and it seemed to come out looking just the same. Probably with a whole lot less calories. I made triangles a few days ago; photo on my Instagram page. I used a drlicious Turkish cheese called luks beyaz peynir. My friend st the Turkish store assured me that it would be a good substitute for feta, which I couldn't find. This was so much better than feta! Not gamey, not over salty, but creamy tasting and not so dry. Anyway, I have rambled on enough. Kudos to your daughter; she is on her way to greatness! Love you, stay home and stay healthy!

  6. Mashallah and well done Zeynep. Happy birthday to your lovely girl and you must be soooo proud. I can't wait to pass my recipes on to my daughter too and cook with her Inshallah. Many thanks for sharing your great recipes. I did try few of your recipes and it's always a winner thanks to your explanations and to not omit different stages. I really miss Turkey, we went to Istanbul last year and the whole family loved it. We were planning to go again this year for easter break but unfortunately due to the actual circonstances, it was cancelled. Inshallah we will be able to travel to your beautiful country again in the near futur.
