My quick and easy Squid with Butter Sauce recipe as seen on Fish & Hunt Australia Season 7.

500g squid tubes, cleaned and cut into rings
4 Tbsp rice flour
1 cup oil (I use Carotino red palm oil)
2 Tbsp butter
2 tsp minced garlic
1-2 sprigs curry leaves
2 small (birds’ eye) chillies, sliced
pinch of pepper
1/2 tsp sugar
1 tsp chicken stock granules
1/2 cup evaporated milk


1. Drench squid rings with rice flour. Flash fry; remove with slotted spoon.
2. Melt butter, add curry leaves, garlic, chillies, fry until garlic is lightly browned.
3. Toss in squid, add all other ingredients.
4. Simmer for a minute or until sauce is slightly thickened. Remove and serve.

  1. You did many things well that other Youtubers don't: music not loud, spoke to us (no computer voice or silent movie), told what it is you added at each step. You left out one essential for any cooking demo: TIME. You should tell us how long to cook the squid. Yes, you warned us "You don't want to overcook" it, but we need to know how long is enough.

  2. Hi Jackie nice recipe. just a quick question though. I noticed that you didn't really clean the inside of the squid, is it not required to do so? I usually turn the good inside out and get all the slimey stuff out. would appreciate your feedback. thank you.
