This is a super easy zucchini bread recipe that will get some veggies into your kids. I added pecan butter for extra richness and texture. We demolished this straight out of the oven. It’s really moist and flavorful and the kids will love it.
1/2 cup Greek Yogurt
1 lg egg
1/3 cup coconut oil
2 tbsp maple syrup
1/2 cup pecan butter. I used Sunday Provisions Pecan Spice flavor. (Link below)
1 medium ripe banana – mashed
1/2 cup coconut sugar
1/2 cup oat flour. Blend it up in magic bullet or food processor
1 cup AP flour
1 tap baking soda
1/4 tsp salt
1 tsp ground cinnamon
1 cup grated zucchini – squeeze water out in a clean towel
1/2 cup chopped pecans – optional
Mix all wet ingredients together in a large bowl. In another bowl mix dry ingredients. Add dry to wet. Fold in zucchini. Add chopped pecans here if using.
Pour into lines baking loaf pan and bake 325 degrees, 45mins or until toothpick comes out clean.
