There are plenty of colourful veggies in this dish, which gives you a boost of dietary fibre and keeps this recipe really wholesome and well-balanced. Using skin-on chicken pieces helps ensure the finished product is succulent and tender; however, if you are watching your fat intake, you can choose to remove the skin before eating. Alternatively, you can substitute the Maryland pieces for lower-in-fat chicken thighs.
