Here’s what you’ll need:
Note, this recipe is called “Spinach Rice” NOT “Rice with Spinach” that’s why the ratio of spinach to rice is more (5parts of spinach to 1 part of rice) …
1 1/2kg fresh spinach
300g white rice (I’m using the KALORINA RICE)
1 onion diced
3 cloves of garlic
3 spring onions (separate the white from
the greeny part)
2 fresh leeks
1/2 bunch of parsley
1/2 bunch of dill
1/3 cup of olive oil
1 lemon & zest from this lemon
Salt & pepper to taste
