A fresh and colourful salad that’s great with meats, or on its own as a main, a salad in a bowl alongside kebabs. Go ahead give it a try

GREEK SALAD

Ingredients

8-10 cherry tomatoes, cut into quarters
1-2 iceberg lettuce leaves, finely chopped
1 small onion, finely chopped
½ small cucumber, peeled, deseeded and finely chopped
50 grams feta cheese, cut into small pieces
8-10 black olives, pitted
Dressing
2 teaspoons red wine vinegar
3-4 teaspoons olive oil
Crushed black peppercorns to taste
Salt to taste

Method

1. To prepare dressing, combine red wine vinegar, olive oil, crushed peppercorns and salt in a small jar. Cover and shake well to mix.
2. Put some cherry tomatoes, lettuce, onion, cucumber in individual serving short glass. Top with remaining cherry tomatoes, some feta cheese and olives.
3. Drizzle some dressing on top and serve immediately.
