#Greeksalad
1/2 large red onion
1/2 sweet cherry tomatoes
1 small avocado
1 romaine heart
1/4 cup each green, kalamata olives, dried cranberries, and roasted artichoke heart
1/2 of a large cucumber (or a whole one)
3 tbs “light” red wine vinaigrette salad dressing
2 small sweet peppers for more colors

Prep + Serve
-chop/dice all ingredients to your liking & place in a large bowl
-drizzle salad dressing over ingredients & mix using a tong
-you are now ready to enjoy this beautiful salad
FYI: you can also make your own salad dressing using the following ingredients:
-Italian seasoning, Oregano, Olive oil, red wine vinegar, salt & pepper

#Healthybowl
1 cup cooked white rice (or brown)
1 small avocado
1 small cucumber (seedless)
1 tsp black sesame seed
3 tbsp sauerkraut (red or yellow cabbage)
Soy sauce or Coconut amino (drizzle)
Sweet ginger chili sauce (drizzle)

Prep + Serve
-slice cucumber to your liking
-find your favorite bowl, plate
-place the rice on one side
-add cucumber slices
-add avocado slices
-add sauerkraut on top
-drizzles 1-2 tbsp each soy (coconut amino) sauce, sweet ginger chili, and back sesame seeds

#vegandessert
1 cup frozen mango
1 cup frozen bananas
3 large medjool dates (diced)
1 cup plant based milk (coconut milk is the best w/ this recipe)

Prep + Enjoy
-place all ingredients in a blender and blend until smooth
-enjoy this as a smoothie or freeze for 2hrs to enjoy as vegan “ice cream”
