GREEK CHICKEN One Pan Dinner | Easy and Healthy

4-6 Boneless Chicken Thighs
3 Carrots thinly chopped
1-2 Potatoes chopped
1/2 Onion chopped
3 Garlic cloves
2 Tomatoes chopped
1 Lemon 
1 cup Olives
1 Bell Pepper chopped
1 Tsp of Salt, Pepper, Thyme and Oregano (Paprika Optional)
3-5 Tbsp of Olive Oil

(Optional Tzatziki) 
1 cup of plain greek Yogurt
1 Tsp of Dill
1 Tsp of Olive Oil
1-2 Slices of Lemon
1 Garlic clove
1/2 shredded Cucumber

Total cook time:35-40 minutes

-Chop/ prep your veggies while you preheat your oven to 350 (if you are pressed on time you can always put it at 375 as well)
-Add seasonings to chicken in a tray
-Add olive oil
-Add all of the veggies (carrots, garlic, onion, potatoes, tomatoes and olives)
-Can add more olive oil if desired and mix
-Add lemon wedges to chicken, and squeeze
-Add a hint of paprika (optional)
-Let bake for at least 25 minutes (in the video we ended baking it longer, this will depend on your oven and tray; keep an eye and if needed bake for some additional minutes
-In the meanwhile make tzatziki
-Shred cucumber
-Add lemon juice and mix
-Add greek yogurt and dill
-Add a splash of olive oil and mix up
