This is my recipe for Greek braised rooster kapama. It is the traditional Greek New Year’s Eve meal that is enjoyed by Greeks throughout Greece. Although rooster is traditionally served, if you can’t find rooster just use chicken and prepare it in the same way. Serve this on a bed of #5 spaghetti or a bucatini and you will be transported to Greece on New Year’s Eve!!! Try it today, love it forever…

  1. Yassou my good friend Ken, just want to wish you a very Happy healthy and prosperous New Year and thank you for all those delicious dishes you are making and teaching us the viewers to make, efkharistoh and kalinikta 😊

  2. Well, I learned something new today! Did not know that rooster was a traditional dish on New Years for Greeks. Thank you for helping me and thousands more get thru this crazy year. Your cooking show was a life saver. I have been battling cancer all year and your program was something I looked forward to. Thanks for everything and I wish you and your family a fabulous New Year. God Bless.

  3. I use a 4 Kg older chicken, pretty close to a rooster flavor. I prefer using Cinnamon Stick, has a more intense peppery flavor over ground Cinnamon.
This is a fantastic tasting dish, thank you. I believe anyone cooking a Tomato Sauce without Cinnamon needs an exorcism.

    Have a great day
