Yia Sas and welcome back to my kitchen! Today we are making Greek Stuffed Capsicum called Gemista or Yemista or Γεμιστά. I am stuffing mine with a beautiful mixture of lean beef mince, arborio rice, onion, garlic, spring onions, dill, parsley & mint 🙂 Feel free to adjust this recipe to fit your lifestyle. This would be great with turkey or chicken for a more “gains” friendly option or with a fake-meat substitute or alternatively, add more rice and herbs and ditch the meat. Its up to you & I hope you enjoy!

6 Capsicum (Bell Peppers)
500g mince meat
1 onion
1 clove garlic
300g rice
1 stock cube
1 bunch spring onion
400g water
1 can diced tomato
olive oil

salt & pepper to taste
