Basbousa (Namoura, Harissa) is a sweet semolina cake made with no eggs or flour. It’s popular in many Arab countries and goes by different names (بسبوسة، نمورة، هريسة). It also crosses different cultures and is known as Turkish Sambali, Greek Revani. With only a few ingredients, this easy to make dessert will soon become your favorite!

2 cups coarse semolina
1 stick of butter (equivalent to 1/2 cup or 113 g)
3/4 cup of sugar
1 tsp baking powder
1/2 tsp baking soda
2.5 cups regular plain yogurt
Almonds or pistachios (to garnish)

For the syrup:
2 cups sugar
3 cups water
1/2 lemon
2 tbsp blossom water
1/2 tbsp saffron (optional)
1 tbsp honey
