CYPRIOT BREAD WITH DRIED MINT – INGREDIENTS

2 cups (300g) plain flour
1 1/2 cups (225g) strong white bread flour
9g fast action dried yeast
5 (55ml) tablespoons olive oil
2 (8g) tablespoons dried mint
1 teaspoon sugar
1/2 teaspoon salt
1 1/4 (300ml) lukewarm milk or water
10 Mehlebi grains, pounded
7-8 Mastic resin, pounded
1 egg yolk plus 2 tbsp milk with sesame seeds to glaze

ΚΥΠΡΙΑΚΌ ΨΩΜΊ

2 φλιτζάνια (300 γραμ.) αλεύρι για όλες τις χρήσεις
1 1/2 φλιτζάνια (225 γραμ.) Ισχυρό άσπρο αλεύρι για ψωμί
9 γρ ξηρή μαγιά
5 κουταλιές της σούπας (55 μλ) ελαιόλαδο
2 κουταλιές της σούπας (8γρ) δυόσμο
1 κουταλάκι του γλυκού ζάχαρη
1/2 κουταλάκι αλάτι
1 1/4 (300 μλ) χλιαρό γάλα ή νερό
10 κόκκοι μεχλέπι
7-8 μαστίχα ρητίνη
1 κρόκο αυγού και 2 κουταλιές της σούπας γάλα με σουσάμι για βουρτσίσμα

PÃO CIPRIOTA COM HORTELÃ SECA

2 xícaras (300g) de farinha de trigo
1 1/2 xícaras (225g) de farinha de pão branco forte
Levedura seca de ação rápida 9g
5 (55ml) colheres de sopa de azeite
2 (8g) colheres de sopa de hortelã seca
1 colher de chá de açúcar
1/2 colher de chá de sal
1 1/4 (300 ml) de leite ou água morna
10 grãos Mehlebi, triturados
7-8 Resina mastique, triturada
1 gema de ovo mais 2 colheres de sopa de leite com gergelim para dourar

  3. I am half Greek so I like to try new (for me) recipes. I don't know where to find mehlebi grains. I live in Toronto, Canada. I know marzipan may be a bit similar in taste.

  5. i love this recipe! i'd love to remake this recipe at home but I cannot find soem of the ingredients in my country. I think I will skip mehlebi and replace resin with something else and I hope it will be also good! 🙂 Never before had i tried a bread with mint! 🙂

  6. Hello Stavros 😀 First I would like to say thank you for your comments. I am answering them now. 7 weeks is a long time. Berna and I know as we have been inside. Coming close to 3 months now. We have been out twice since then. It's not good for the mind as well as the body. We don't have a garden to go to. Only our apartment with mother. It's like we have house detention. For something we haven't done. Anyway. I'm going to watch your video now. I am a bread lover. Berna and I love making bread together. Flat bread. Have a wonderful new day tomorrow friend.
