Prednisone friendly recipe.

Should you try a plant based diet while on prednisone? YES. A Vegetarian diet
Is very close to the Anti-inflammatory diet. I also show you how to make an excellent vegetarian antioxidant salad, “Rainbow” Salad.

Salad build
Ingredients:
1. 1/2 c cooked and cooled farro. (other grains work as well)
2. 2 c Baby kale or arugula
1 tsp olive oil
Sprinkle of salt
3. 2 Tbsp frozen corn defrosted,
diced red peppers, blueberries, defrosted edamame, dried cranberries, shredded carrots and parmesan.

Process:
Oil and salt arugula, set aside. In serving bowl layer farro on the bottom, then arugula and top with remaining ingredients.

Avocado dressing
Ingredients:
1 whole avocado diced
1/4 c plain greek yogurt
1 tsp lime juice
2 tsp apple juice
1 tsp balsamic vinegar
1 tsp finely chopped fresh cilantro or 1 tsp dried or paste
1 Tbsp olive oil
Salt and pepper to taste

Process:
Blend all ingredients, it should be the consistency of mayonnaise. If you like it thinner add about 1 Tbsp water or apple juice if you like it a bit sweeter.

  2. OKay! We have a new recipe to try! Looks as colorful as it is healthy! – all these anti-oxidants are sure to reduce the aging process, and keep our tastebuds happy.

    I normally think bad thoughts about arugula too, but generally try not to express it publicly- maybe Sp-Asthmatic Shef Sheila has issues to work out with arugula…
