This is a traditional Greek recipe for stewed green beans in a light tomato sauce with sweet potato, eggplant and zucchini. Known throughout Greece as fasolakia, in this video I serve it with couscous and topped with crumbled feta cheese. This vegetarian green bean recipe is delicious, nutritious and simple to make. You can serve it as a meatless main or as a side dish.
