  1. I usually add a teaspoon of mustard instead of the lemon and it gives the perfect amount of tartness. And if you add water (after you made your "special" mayonnaise) one spoon at a time, you get a delicious sauce/dipping sauce that you can add to fries or steak or whatever

  4. Chef John, after bingeing all your videos I found an old Julia Child video where she made creme fraiche using 1 part sour cream 2 parts heavy cream instead of cultured buttermilk and cream. Why am I telling you this? Because nobody has cultured buttermilk in their house, but everyone has sour cream (especially in the Southwest). Does this make it taste different?
