Make holiday breakfast or brunch extra special with these delicious pumpkin cream-filled treats, or forgo the pie for these pumpkin pie cannolis! Make a smooth, creamy filling by mixing confectioners’ sugar with pumpkin puree, mascarpone cheese, ricotta cheese, instant vanilla pudding mix and pumpkin pie spice.  Then add freshly whipped cream to lighten the filling.  Pipe into cannoli shells and garnish with more confectioners’ sugar, sprinkles or chocolate. The dreamy results are smooth, crunchy and so fun to eat!
