This is a nutritious and wonderfully satisfying vegetarian dish. The name yiyantes comes from the Greek word for giant (giant beans). Yiyantes can be cooked a couple of different ways, and in this recipe Eva shows us how to prepare these giant beans in tomato juice baked in the oven (plaki-style).

  1. I tried this recipe and the lima beans came out hard as brickbats. Imho, the lima beans need to be blanched for more than 5 minutes.

    A recipe for cookinng beans in the oven (rather than blanching):

    4 Quarts water
    3 Tablespoons salt
    1 pound beans

    Soak overnight

    Drain beans & cook in an oven:

    4 Quarts water
    1 teaspoon salt
    add beans and bake in a dutch oven – heat oven to 275-350 F degree – bake for 60-90 minutes.
